Cooking on a gas stove is too hot for my stainless steel. What material is best when cooked on a gas stove?

Gas, electricity or fire, is best to cast my concerns. Properly seasoned and of course get non-stick, heat evenly, stays hot and gives the best results.
I did win a small frying pan, medium and large iron Dutch oven and cast iron, no changes to the World Series for the Cleveland Indians .... Well, I could trade in medium frying pan .... lol.
Rare scrub my cast iron, to remove and rinse after it cooled. If it's a bit more funky, I wash and season again lightly in the oven.
To season a new frying pan, thoroughly coated with a sponge and warm water, rinse and brush, and sent many pans with automotive or machine oil to retard oxidation. After washing, covered the inner layer and a thin outer layer of fat or Crisco sitting upside down in a baking pan and leaf area in the oven at 300 degrees for 1 1/2-2 hours. Allow to cool, then gently wipe with a paper towel and hanging pot racks. Film of eggs, the food will turn brown as if by magic, and learn to love as I do!

I prefer stainless steel gas, but I love my cast.

My whole family is cooking in cast iron pans for generations! They are the best for every kitchen. Hope this helps.
